“Whatever” (是但)

The phrase “Si Daan” reflects the Cantonese dining culture of ease and trust. Farm House transforms this sentiment into a signature creation: egg whites gently steamed in superior stock, topped with salted egg yolk, prawns, scallops, roasted duck, dried scallops, shiitake mushrooms and diced vegetables. Vibrant in colour, savoury yet light, it is refined indulgence without heaviness.

Glutinous Rice Stuffed Chicken Wings

Whole chicken wings are carefully deboned by hand, marinated, and filled with glutinous rice stir-fried with dried shrimp and preserved meats. After air-drying and deep-frying at high temperature, the skin turns golden and crisp, while the filling remains chewy, fragrant, and rich with wok hei. A beloved handcrafted classic, layered in texture yet never greasy.

Double-Boiled Fish Maw & Pork Lung Soup with Fresh Almond Milk

Fresh southern and northern almonds are ground into milk and slow-simmered with generous portions of fish maw and pork lung for several hours. The soup is creamy and soothing, naturally sweet without dryness — nourishing yet light. The gentle almond aroma enhances the gelatinous texture of the fish maw, showcasing true mastery in traditional Cantonese soup-making.

Pan-Seared Leopard Coral Grouper with Salt

With its firm flesh and rich flavour, leopard coral grouper is best prepared simply. The fish is lightly rubbed with coarse salt and pan-seared slowly in hot oil until the skin turns crisp and golden, sealing in moisture. Crisp skin, tender flesh, and balanced savouriness reflect the chef’s deep understanding of heat control and ingredient respect.
